According to Chinese tradition, noodles are not only delicious, they are also very healthy. An ancient Chinese proverb says:
Perhaps this is the reason why many Chinese res- taurants use Tai Ming dry rolled noodles. However, this is not their only benefit!
Van der Moolen-Foodgroup has its own production facilities (previously Noodlefactory Tai Ming bv) where dry rolled noodles have been produced according to authentic Oriental methods for over forty years. The great advantage of this time-honoured traditional process is that the noodles have a unique and distinctive character in terms of taste, structure and appearance. The light rolling process allows the noodles to absorb more flavour from spices and added ingredients and gives the noodles a very high cooking resistance and a high yield after cooking. The noodles produced by Van der Moolen-Foodgroup are ideal for using in (industrial) chilled and frozen meals, authentic Asian stir-fried dishes, deep-fried noodle snacks, noodle salads, soups, etc. For each individual sector the specifications for the noodles have been geared towards the processing requirements. For example, a Chinese restaurant has very different requirements than the food industry, food service sector or consumer market, and the characteristics of the noodles are based on these requirements. The rolled noodles can also be delivered in a range of sizes and packing forms with diverse additions, in keeping with the wishes and requirements of the end user. Eggs, colouring and even spices as curry and chilli can be added to the noodles.

In order to provide a comprehensive service to all the
different markets, the range of rolled noodles is supplemented

Chinese noodles (Mihun rice noodles/rice
vermicelli)
In the Far East, Mihun rice noodles are made from rice flour. This typical Oriental product is commonly used in the Asian restaurant sector. However, it is less suitable for industrial processing as it is very fragile. Italian capellini pasta is often used as an alternative. This is a very fine spaghetti that looks a lot like thin Chinese rice noodles after cooking but is far more resistant to the cooking process.
